Curried Quinoa Salad

Serves approximately 4

3/4 cup uncooked quinoa, well rinced
8 oz black beans, well rinsed
2 tbsp chopped red onion
3.4 cup fresh cilantro
1/2 cup chopped red pepper
1 chopped tomato
1/2 cup dry apricots, dates or figs


Dressing:

1 tsp finely chopped fresh garlic
1 tbsp finely chopped fresh ginger
1/2 cup or juice (cranberry, orange or apple cider)
3/4 tbsp curry powder
3 tbsp red wine vinegar
2 tbsp maple syrup
4 tbsp grape seed oil or olive oil
salt  and pepper to taste

1. Add quinoa to 3/4 cup boiling water, reduce heat and cook 10 min. until water is absorbed. Let cool.
2. Prepare dressing.
3. Mix all ingredients when quinoa is cool.
